Death By Chocolate Oatmeal Cookies that any adult would love with Gluten free version



Death by Chocolate Oatmeal Cookies - GF substitutions in ( )
3 cups sugar
3 cubes margarine
3 eggs
1/2 tsp vanilla
 2 1/2 cups all purpose flour
(2 1/2 cups Feather Lite Mix recipe to follow below)
(1 tsp xanthan gum)
2/3 cup dutch cocoa 
2 tsp baking soda
1 tsp salt
5 cups Instant Oatmeal (Gluten Free Oats)
6-12 ounces chocolate chips

Cream sugar and Margarine together. Then mix in the eggs and cocoa.
In a separate bowl sift the rest of the ingredients except the rolled oats. This prevents chunks of baking soda from showing up in your cookies. Stir the dry mixture into the creamed mixture. Then stir in the oats and chocolate chips.
Preheat the oven to 350 degrees. (F)
Use a small cookie scoop and scoop onto three 1/2 sheet pans. You should end up with about 75 cookies.
Bake them until they are set. Unless you like crisp cookies don't over bake them.
They may look a bit moist along the cracks and if you touch them they will deflate a bit still. But they are done when they are set and dry on the surface.
If you try to brown these you'll over bake them.
This recipe freezes beautifully. I double bag them and keep them for lunches or desperate quick snacks.

(GF Flour Mix - Feather Lite Mix-)
3 cups rice flour
3 cups tapioca starch
3 cups corn starch
3 tbsp potato flour - Not potato starch they are very different.
(OR 3 Tbsp potato pearls are a suitable substitute.)
