Artisan Bread in Five Minutes a Day - Today's Bread
Today's bread is The Master Recipe from Artisan free form Boules from Bread in Five Minutes a Day. At our house we can total a whole lot of bread. Last night I made the dough and aged it on the counter for a couple of hours before placing it in the refrigerator over night.
This afternoon I couched all of the dough on the counter in elongated loaves. It turned out beautiful baked on my square stone with a steam pan on the lower rack. If you are looking for a stone you might check out my pizza post.
I used Kosher salt so that the salt measurement would be correct, but I suggest reducing the salt. I must admit I have not been a Kosher salt user. (I store iodized salt in my storage). I mixed the dough in my kitchen aid until the dough was evenly moistened, then dusted it with additional flour before covering it for it's rest in the fridge.
