Pumpkin Apple Streusel Muffins - Fall is in the Air

Each fall I look forward to making these yummy muffins. They are warm and inviting and smell as good as they look.

Pumpkin Apple Streusel Muffins

2-1/2 cups flour
2 cups sugar
1 Tablespoon pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 cup canned pumpkin
1/2 cup oil
2 cups chopped Gala apples
4 teaspoons butter
1/4 cup sugar
1/2 teaspoon cinnamon
Whisk together dry ingredients in one bowl. Whisk together wet ingredients in another bowl, then mix with dry ingredients, just until moistened. Drop batter with a muffin scoop into 18 greased muffin cups. Top with streusel topping (cut together butter, sugar, and cinnamon until crumbly). Bake at 350 degrees for 30 to 35 minutes.
