Breakfast Casserole - For Christmas Morning
If you and a Breakfast Casserole have not yet met, then here is your chance. Breakfast Casseroles have got to be the most wonderful, easy, hit the spot breakfast around. They are easy, time friendly and sooo good. They can easily be prepared the night before and tossed in the oven when you wake on Christmas morning.
They are very flexible. They can be made with a wide variety of ingredients. Bread, sausage, left over tator tots, cubed fried potatoes... In this one I used Udi's Gluten free bread so that my Celiac daughter could freeze the leftovers and munch on it a while.
Here is a recipe that resembles what I toss in. (I use milk and up to 9 eggs.) Please forgive the short post. I burned one of my finger tips while was cooking and it hampers my typing. :o)

Shalei, Only if I cook like a battalion is coming. :o) This was one of two pans I cooked that evening. :o)
