Glazed Orange Cranberry Muffins


This morning I opened the freezer and saw the cranberries that I froze at Christmas time.  I never got to the Cranberry bread this year.
There was just too much going on. 
Knowing I had no Orange Juice concentrate in the house I turned to the pantry.  Here is what I came up with.  (This recipe can be made with all shelf stable food storage/pantry items.)

Muffins-
3 1/2 cups all purpose flour
1/3 cup sugar
1/3 cup Tang Powdered Orange Drink Mix
1 tbsp plus 1 tsp baking powder
1 tsp salt
2 eggs, beaten
1 1/2 cup milk
1/2 cup vegetable oil

Mix dry ingredients in one bowl.
Combine wet ingredients in another bowl and combine well.

In medium bowl or measuring cup toss the following until mixed-
2 cups chopped cranberries
4 tbsp sugar
(Or omit the Cranberries and 4 tbsp sugar and use 1 cup or more Craisins)

Combine the ingredients from all three bowls.  
Stir with a folding motion taking care not to over mix.
Leave a few small lumps.
Bake at 400 degrees for about 10-12 minutes.

Glaze-
(Rinse and reuse the bowl used from the cranberries.)
Add about 3/4 of a cup of powdered sugar, 
1 tbsp Tang and enough water to make a runny glaze.

Place baked muffins on a piece of waxed paper and drizzle with the glaze.
Allow them muffins to stand while the glaze sets up prior to bagging the left overs.
