Easy Santa Fe Chicken Casserole - Philidelphia Santa Fe Cooking Creme (Gluten Free)


I saw the Cooking Creme in the store and thought it looked good.  Regular creme soups are out for Celiacs.  So just for fun, we tried this.  It could use some green pepper chunks for color. 

Easy Santa Fe Chicken Casserole

Small onion chopped
1 pint bottled chicken breast
1 can corn, drained
15 ounce can tomatoes
1 tub (10 oz) Philadelphia Santa Fe Blend Cooking Creme
1/2 cup mexican style shredded cheese
2 tbsp olive oil

Saute the onion in large skillet.  Then add the remaining ingredients together while the rice cooks.

2 cups Minute Rice
2 cups Water
Cook the rice for 5 minutes until done.
Salt to taste and then combine with the 1st mixture.

A more frugal option would be a creme sauce with shredded Pepper Jack cheese.
It was really good!

  2. I found it in the refrigerated section. This was the first time I had ever seen it.
    One could just as easily substitute a white sauce with pepper jack cheese for the cooking creme. Don't tell Kraft that. :o)
