Easy Peasy Key Lime Pie

I decided on pie for my birthday this year.

And yes, It is shameful, but I used a store bought crust.

This recipe is a bit small for a deep dish pie crust, but life goes on.

Key Lime Pie

14 ounce can Sweetened Condensed Milk
4 egg yolks
1/2 cup plus 2 tbsp. Lime Juice
1 - 2 drops liquid Green Food Coloring

Whisk together and let stand for 20 minutes or so to allow the acid to thicken the sweetened condensed milk.  Pour into a graham cracker pie crust.  (Mine was deep dish, as you can see regular would have been plenty.)

Bake for about 15 minutes at 350
Cool completely before topping with stabalized whipped cream.

Stabalized Whipped Cream

1 pint Whipping Cream
2 tbsp Sugar

Whip in chilled mixer bowl until firm.

1 Tbsp instant Vanilla Pudding Mix

Sprinkle Vanilla Pudding Mix over the whipped cream.
Beat quickly until mixed in.  Scrape the bowl if needed and pulse again.

Pipe daisies onto the pie with a large tip.

    2. I always used this recipe from the Betty Crocker Cook Book in Arkansas. I always brought pie to the family night on Tuesdays for quite a while! My recipe called for grated lime peel in and on top. I like it like that plus a nice twisted wedge of lime on top. Oh those hot nights and the cool pie- makes me hunger for my Southern friends and a slice of pie (a BIGGIN')!

    3. Sadly, my limes sat in the refrigerator for too long. So, they ended up in the trash instead of on the pie. :( Nothing better than Lime Zest. :)
